Grilled Vegetable and Paneer Tikka Recipe

Ingredients :

  • Cauliflower (gobhi) small 
  • Brinjal (eggplant or began ) 2 small size cut round 
  • Potato 2 medium size cut into 2 inch cube
  • Green Bell Pepper 1 
  • Red Bell Pepper 1
  • Yellow Bell Pepper 
  • Broccoli small
  • White Mushroom 16
  • Paneer  (Indian Cheese ) 1 block , cut into thick 2 inches cube 
  • Tomato ( can use grape tomato or  normal tomato cut into cubes )
  • You can use any kind of veggies that you have on hand .
  • Skewers (sticks )

Marinate :

3 table spoon Yogurt(Curd)
Coriander/ Cilantro leaves chopped
Mint leaves (optional) Chopped
salt as per taste 
1 tsp Chat Masala
1 tsp Amchoor(Dry Mango)
1/2 table Spoon Garam Masala / can use Tandoori masala from market 
2 Table Spoon Corn flour or Besan (gram flour)
2 Table Spoon Olive oil  / vegetable oil

Method :

Make the Marinade before 3 Hours , pour into Vegetables and  Mix well  and let sit vegetables for 2 hours .

Soak the Wooden Skewers in water for at-least 4 hours otherwise they will burn when  put on the Grill.

When you are ready to grill  , pic the Paneer from marinade and set aside , toss the veggies in the mixture so that they coat evenly.

Start skewering  the veggies alternative like Bell Papers, Mushroom , Paneer, Vegetables . Pre heat the oven, cover the baking tray with silver foil  , spray oil in that and then put sticks . put it in a oven in 350 degree, keep turning each side until both sides are cooked.  Lightly brush each skewers with marinade . grill for 30 minutes .

 Remove from the heat when it becomes  brown or tender and serve hot with Green chutney or any souse.
