Baingan Bagara (Without Onion Garlic )


Baingan Bagara



Ingredients 


  • 4 small Brinjals (eggplant)
  • 1 tomato chopped
  •  tea spoon turmeric (haldi)
  • 1 table spoon coriander powder (dhania powder)
  • 3 to 4 curry leaves 
  • 1 tea spoon chili powder 
  • 1/2  tea spoon tamarind paste 
  • 2 table spoon oil
  • salt to taste

Dry roast 


  • 1 table spoon sesame seeds ( white til)
  • 1 table spoon poppy seeds (khaskhas , posta dana )
  • 2 table spoon pea nut ( mungfalli dana )
  • 1 table spoon coconut crushed (optional)
  • 1 small piece of ginger

Whole garam masala for tadka:

  • 1 tea spoon cumin seeds (jeera)
  • 1 tea spoon mustered seeds  (Rai)
  • 1/2 tea spoon fennel seeds (methi)
  • small cinnamon stick (dal chini)
  • 1 big cardamom ( black elaichi)
  • 2 small cardamom (green elaichi)
  • 2 cloves (laung)
  • 1 bay leaf

Direction

  • Wash the brinjals and then slit the binjals from both the side 
  • Take a spoon of oil in pan to fry brinjals, if u want then u can dip fry it as well.
  • Cook it until gets soft and cooked from in side
  • Roast all the dry roast thing and grind it properly with little water. 
  • Take a 2 table spoon of oil in pan 
  • Add all the whole garam masala , let them crack.
  • Add turmeric and coriander powder and curry leaves
  • Add chopped tomatoes ,add little salt and cover it for 2 to 3 minutes or until tomato gets cooked and mashed.
  • Add chili powder and dry roast paste 
  • Mix it well and saute until oil gets off.
  • Add little water and cooked brinjals
  • Add tamarind paste and then mix it well
  • Cover it for few minutes and let it cook until gravy gets thick.
  • Serve hot with Rice , Pulao , Biryani or Chapati.

 


Tips:


  • Who ever wants to add onion garlic can add,  1 small onion and 2 garlic cloves.
