Mushroom a & Okra ( Bhindi) with Bell Peppers


Mushroom a & Okra ( Bhindi) with Bell Peppers  







Ingredients :

For Mushroom :

1 Cup Mushroom sliced
2 table spoon olive oil/vegetable oil 
2 garlic cloves minced
1 Table spoon ginger minced
1 tea spoon black pepper
1 Cup Cheery tomatoes cut into two parts 
1 Table spoon Fresh Lime juice 
1 Tea spoon Red chili powder 
Salt as per taste
Colored Bell peppers (Red , yellow, Green, whichever u want ) Cut into two parts 

Directions:

  • Bring oil to high heat in a pan.
  • Add garlic  and ginger saute for 5 minutes. Avoid burning garlic. Saute for 2 minutes 
  • Add Mushroom , salt, pepper and red chili powder, saute for another 5 minutes. 
  • Until Mushroom are softened
  • Preheat the oven or microwave , Lightly grease the baking sheet . 
  • while Mushrooms are cooking prepare the bell peppers.
  • slice them in a half length wise and remove the seeds.
  • Now when Mushrooms are once softened add the tomatoes and saute for few more minutes 
  • Add the lime juice.
  • Spoon the Mushroom mixture into the bell peppers properly.  
  • Place the pepper on a baking sheet.
  • Bake for all most 30 minutes. We can do it in a microwave and tawa as well .
  • When ready the peppers should appear darker and crinkly.
  • Garnish with chopped fresh coriander leaves.

For Okra (Bhindi):

1 Cup okra sliced
2 table spoon olive oil/vegetable oil 
2 table spoon Onion chopped
1 tea spoon black pepper
1 tea spoon turmeric powder
1 Table spoon Fresh Lime juice 
1 Tea spoon Red chili powder
1 Teas spoon garam masala (optional)
Salt as per taste
Colored Bell peppers(Red , yellow, Green, whichever u want ) Cut into two parts 

Directions:

  • Bring oil to high heat in a pan.
  • Add Onion saute for 5 minutes, Saute for 2 minutes.
  • Add turmeric.  
  • Add Okra, salt, pepper and red chili powder, saute for another 5 minutes. 
  • Until Okra are softened , cover it for 5 minutes.  
  • Preheat the oven or microwave , Lightly grease the baking sheet . 
  • while Okra are cooking prepare the bell peppers.
  • slice them in a half length wise and remove the seeds.
  • Now when Okra are once cooked , bring it to high heat and crisp it saute for few more minutes. 
  • Add the lime juice and garam masala. turn the heat off.
  • Spoon the Okra mixture into the bell peppers properly.  
  • Place the peppers on a baking sheet.
  • Bake for all most 30 minutes. We can do it in a microwave and tawa as well .
  • When ready the peppers should appear darker and crinkly.
  • Serve Hot .

Tips :

  • If u r using pan or tawa  , Make it to heat add tea spoon oil and place the peppers, cover it for almost ten minutes in low heat. 
  • when fully cooked open the cover and cook another 10 minutes.
  • When ready the pepper should appear darker and crinkly.
