Rasgulla


Rasgulla Recipe 





Ingredients:

4 Cups Milk
4 table spoon vinegar or 1/4 cup lemon juice 
1 cups Sugar 
3 cups water
pressure cooker 

Directions: 

Paneer :

  • In a large bowl take milk and bring it to the boil.
  • After bowling the Milk add vinegar or lemon , stir continuously while curd starts separating
  • Once the milk fat means the paneer is separated from the whey and u can see the transparent water  turn off the heat.
  • Drain the water using a straighter line with cheese cloth or a muslin cloth.
  • Wrap the cheese in a muslin cloth and rinse under cold water and squeeze well.
  • To take out excess water from the paneer squeeze tight the cloth and press the paneer under the heavy bottom pan . 
  • When all the water gets off from the paneer just to check just take a little piece of paneer on your palm and rub with your fingers , after the rubbing for 2 to 3 minute  you will be able to make a smooth firm ball. it will not stick on your palm.
  • Once a paneer drained place it in a big bowl , kneed and rub  it for 15 to 20 minutes , until the paneer is almost rolls into smooth soft dough.
  • Kneed the paneer properly. 

Rasgulla :

  • Divide the dough into small parts and make a smooth firm balls.


  • Mix the sugar and water into pressure cooker in a medium high heat and bring to the boil.
  • Add the balls in a pressure cooker , don't put too much balls at one time otherwise they will not get sufficient space and will not get in full volume and the water label should be good  as well.
  • cover the lead and wait for a 1st steam (city) after then turn the heat low for seven minutes. 
  • After seven minuter turn the heat off. and wait for all the steam gets off from the cooker .
  • Open the lead .
  • Rasgulla should be little spongy , keep it in refrigerator. 
  • Serve chilled.

Tips :

  • While making i learned that water level of pressure cooker should be good other wise rasgullas will not be spongy and will not come in shape , it can get hard .
  • You can repeat the method just adding water and sugar in the pressure cooker.
