Vegetable Quesadillas


Vegetable Quesadillas


Ingredients


2 cups Spinach chopped
1 cup spring onion chopped
1 cup tomato chopped
1/2 cup green bell pepper
1/2 cup red bell pepper
1/2 cup yellow bell pepper
2 table spoon olive oil 
1/2 cup mushroom diced (optional)
1 tea spoon red chili powder 
1 tea spoon ground black pepper
salt to taste
1/2 cup mozzarella cheese
1/2 cup cheddar cheese or any cheese of choice 
cilantro chopped  for decoration
  

Directions

  • You can buy tortillas from store or can make Tortillas.
  • Heat spoon of oil in a pan add all the chopped vegetables in a pan.
  • Saute it for 2 to 3 minutes and then add salt , black pepper and red chili powder.
  • cook until the most of the liquid gets dry.
  • Turn the heat off, keep the mixture aside.
  • Place a plan flat pan (tawa) at low flame.
  • Mix both the cheese at bowl.
  • Add spoon of olive oil in that and then place one tortilla.
  • Spread cheese mixture at tortilla then spread vegetable mixture over the cheese. 
  • Cover with another tortilla and then spread little oil on that.
  • flip it with spatula, cook until both the sides are light brown and cheese get melted.
  • Cut into squares or triangles or however you want.
  • Sprinkle some chopped cilantro and chopped spring onion leaves. 
  • Serve hot with any sauce, sour cream,  guacamole dressing or salsa you can eat without anything as-well its too tasty and tempting.
