Vegetarian Lasagna (Spinach,Mushroom & Peppers )


Vegetarian Lasagna (Spinach,Mushroom & Peppers ) 



Ingredients:


  • 2 Cups Spinach
  • 1/2 cup onion
  • 2 cloves garlic
  • 1 cup Green or red  bell pepper chopped or whatever u have
  • 2 cups mushroom sliced
  • Pasta sauce
  • 2 tea spoon black pepper
  • Italian seasoning 1 tea spoon
  • lemon herb seasoning 1 tea spoon (optional)
  • salt to taste
  • chili flecks as per taste
  • Mozzarella cheese 2 cups
  • Cheddar cheese 1&1/2  cups
  • 4 table spoon olive oil /vegetable oil/ canola oil 
  • 2 to 3 table spoon tomato sauce 
  • 1 Large Baking Pan 
  • Lasagna noodles 12


Directions:

Spinach Mixture :

    • Take 2 table spoon oil in a pot , turn on the heat 
    • Add chopped spinach , saute for 2 to 3 Minutes 
    • Add green or red bell pepper , saute another 1 to 2 minutes , add black pepper , salt, chili flecks and half tea spoon lemon herbs & half tea spoon Italian seasoning  (take a seasoning in a hand a rub it from your palm ).
    • saute for another 2 minutes , then  turn the heat off.

 Mushroom Mixture:

    • Take 2 table spoon oil in a pot , turn the heat on.
    • Add chopped onions and garlic , saute for 2 to 3 minutes in a medium heat .
    • Add sliced mushroom saute another few minutes.
    • Add black pepper , salt , chili flakes , and Italian seasoning . 
    • Saute it for 1 to 2 minutes and then turn the heat off.

Lasagna Noodles: 

In a large bowl take 3 cups of water , add 1/2 tea spoon salt and 1 tea spoon oil.
Add lasagna , boil it for 8 to 10 minutes or as per written at lasagna packet. 


Baking:

  • Take a baking pan , spray some olive oil and then layer  2 table spoon Tomato sauce
  • Lay 4 lasagna noodles over the sauce horizontally .
  • Now spread spinach mixture on the top of lasagna noodles and then a layer of Pasta Sauce 
  • Then spread Mozzarella cheese and then Cheddar cheese.
  • Make Another layer of 4 lasagna noodles 
  • Now Spread Mushroom layer and top of that a layer of Pasta Sauce , then spread mozzarella cheese and cheddar cheese again.
  •  Make another layer of 4  lasagna noodles .
  • Top of the noodles add Pasta sauce again and then  spread both the cheese mozzarella and cheddar. 
  • Cover it with silver foil or with Baking pan cover.
  • Preheat the oven for 5 minutes at 350 , place the Baking Pan  for 25 Minutes or until cheese is melted and mixed  properly .
  • Broil it for  3 to 4 minutes , after broiling it would be nice golden brown in color 
  • Sprinkle some Cilantro .

    Serve Hot.   



Tips:

  • You can make as  many layers as you want.
  • You can use any choice of vegetables you want like Broccoli , zucchini , squash Paneer , tofu , bell peepers.    
  • Even the onion garlic are also not very necessary.
