Thekua (Indian Bihari Cookie)


2 cups whole wheat flour
1 cup sugar grinned
1 tea spoon green cardamom powder
1/2 cup of milk or lukewarm water  for kneading
2 table spoon ghee
Choice of you  dry fruits coped (almond, cashew, coconut )
Oil or ghee for deep frying


  • In a big bowl mix wheat flour, sugar, cardamom powder,ghee and dry fruits, knead it with milk or water properly, dough should not be sticky.
  • Cover the dough and keep it for 1 hour.
  • Heat the oil or ghee for frying.
  • Make small balls , Take a ball in between your palm press it slightly to make a proper cookie shape ,do turn by turn with every ball, you can make the design with spoon or knife.

When kadai is hot ,gently drop these rolled out thekua into oil and fry in both sides, until thekua gets golden brown.
