Litti Chokha Recipe

Litti Chokha 


 For Litti Dough

3 Cups wheat flour
1 tea spoon salt
1 tea spoon ajwain
2 table spoon ghee/Oil for moyan
water to make dough

For Stuffing

1 cup sattu flour
2 table spoon green coriander leaves chopped (cilantro)
3 to 4 green chilly chopped
1 table spoon cumin seed (jeera)
1 table spoon ajwain (carom seeds)
1 table spoon mangrail seeds (kala jeera, fennel seeds)
1 inch ginger chopped
3 to 4 table spoon lemon juice
2 table spoon mustard oil
1 table spoon pickle spices (use mango picle spices or stuffed red chilli spices)
salt to taste

For chokha 

1 or 2 big brinjal
2 big tomato
3 to 4 green chilly chopped
4 medium size potatoes
1 inch ginger chopped
3 table spoon mustard oil
3 to 4 table spoon coriander leaves chopped (cilantro)
salt to taste


Dough for liiti

Take a flour in a big bowl, mix all the dry ingredients properly.
Mix water slowly and make a soft dough.
Cover it and keep aside for some time.

Stuffing for litti

Take sattu in bowl.
Mix all the dry ingredients, Mix it well.
Now add lemon juice, pickle spices and mustard oil mix it properly.
Stuff is ready.

Making Litti

Make medium pieces of dough.
Take a dough bowl expand it from the help of finger, place 1 or 1/12 spoon of stuffing.
Wrap it slowly from each side and close it gently and make a nice ball and then press it from the middle and flatten it little bit.
Now litti is ready to fry or bake.


In tandoor

Heat the tandoor and place the stuffed pieces dough in a tandoor or BBQ grill and cook it by turning all the sides  regularly. You can make it in a oven too, preheat oven 350 F and and then put litti bowls in that , keep turning them in every 7 to 8 minutes, it will take 30 to 40 minutes to cook.

Till that its brown and cracked from middle.

In Oven

Pre heat the oven in 250 degree for 5 minutes and then place the stuffed pieces.
Turn all the sides in every 5 to 6 minutes.
Bake it till its cracked from the sides and gets in light brown in color.


You can fry it as well , in a medium low heat.


Wash the brinjal and tomato's , spread some oil in brinjal and then cook it directly to the gas in a medium heat , change the sides contentiously, till its cooked properly and , it would be soft from inside. same process with tomatoes' as well.

You can cook it in  the oven as well, spread some oil in the brinjal and then cover it with aluminium foil and place it in the oven at 250 F. cook it for 8 to 9 minutes.

Take a boiled potato's , wipe brinjal skin and tomato's .
Mash it all together potato, brinjal and tomato, mix it properly.
Now add chopped green chili's, salt, chopped coriander leaves,  chopped or cursed ginger and mustard oil.

Mix it properly and serve with hot Litti and ghee .
