Veggie Bowl recipe



Ingredients

2 cups black beans boiled

For salsa

1/2 cup diced tomato
1/2 cup green capsicum cubes
1/2 cup red and yellow capsicum cubes
1/2 cup broccoli small pieces
1/2 cu zucchini cubes 
1 tea spoon fresh lime juice
2 tea spoon dried oregano 
1 table spoon chili or hot sauce
2 tea spoon olive oil
1/8 tea spoon black pepper
salt to taste

Avocado sauce

1 large avocado  mashed
salt to taste
1/4 tea spoon black pepper
1/2 tea spoon olive oil

Tortilla Chips

2 cups Lettuce chopped


Directions

  • Add little salt and water in a black beans and boil until it gets cooked.
  • Chopped the lettuce add a spoon of vinegar and pinch of salt and keep aside.
  • Chopped all the veggies for salsa.
  • Add a spoon of olive oil add all the veggies together , saute it for 3 to 4 minutes.
  • Add salt, oregano, lime juice and black pepper and chili or hot sauce.
  • Saute another 2 or 3 minutes, turn the heat off and keep aside.
  • Make avocado sauce , You can make it simpler as well with just adding salt, black peeper and olive oil in a mashed avocado.

Assembling


First spread tortilla chips in a bowl or in a plate.
Now in the top of tortilla spread boiled black beans.



Top of that spread veggies and chopped lettuce

And then avocado sauce.

You can add some hot sauce in top as well.

Serve a healthy dinner or lunch !!
