Baked Zucchini Recipe

Baked Zucchini Recipe


1 (large) zucchini slices
1/3 cup whole grain breadcrumbs
1/4 cup grated Parmesan cheese 
1/4 teaspoon black pepper
salt to taste
1/4 tea spoon red chili powder
 3 tablespoons water
1 table spoon olive oil/vegetable oil


Preheat oven to 355 degrees.
Combine all things in a small mixing bowl, breadcrumbs, parmesan cheese, black pepper, salt, and chili powder.
Dip zucchini slices into water  and dredge into bread crumbs to coat both sides. 
Arrange zucchini on a cookie sheet/tray and lightly mist with a olive oil.

 Bake 15 to 20 minutes, turn over and continue baking until golden, approximately 10-15 minutes (being careful not to burn). 
Allow to cool to room temperature before storing in an airtight container.


 It may be necessary to press crumbs onto zucchini slices to ensure the crumbs stick.
