Veggie Burrito/ Veggie Roll Recipe


4 Flour Tortillas, recipe follows
1 cup Avocado chopped
1 cup cooked white rice 
1/2 cup black or green olives chopped
4 to 5 lettuce leaves or you can use 2 cups of sliced lettuce as well 
1 cup zucchini, trimmed and sliced lengthwise
1 cup  yellow squash, trimmed and sliced lengthwise 
1 cup green cabbage sliced 
1/2 cup red bell peppers sliced
1/2 cup yellow red peppers sliced
2 table spoon olive oil
2 to 3 table spoon fresh oregano chopped or 1 table spoon of dried oregano
1 teaspoon salt
1 teaspoon freshly ground black pepper
1 table spoon soy sauce
2 table spoon chili sauce or dried chili flakes



  • Boil rice with little salt and keep as side.
  • Cut avocado and keep aside.
  • Chop olives and keep aside 
  • Take lettuce leaves wash it and keep it for assembly
  • Heat oil in a pan, Add sliced cabbage ,saute for 2 to 3 minutes and then add capsicums, zucchini , squash , saute for 3 to 4 minutes, add salt, soy sauce and chili sauce or chili flakes and grounded black pepper.
  • Cook for another 2 to 3 minutes.
  • Turn the heat off and then keep aside.


  • Add 1/2 table spoon in a hot flat pan (Tawa).
  • Keep tortilla in a pan and then add spoon full of rice , top of that assemble 2 table spoon of veggies , then add avocado and then top of that add olive and then top of that lettuce.
  • Roll the burrito tightly .
  • Brush oil top of that and then flip carefully to another side and cook for another 2 to 3 minutes, that should be little crust.

  • Cut into from middle and then serve hot, You can use hot sauce while eating if u need.
