Quinoa Vegetable Khichadi

Quinoa grain has been called a superfood. Protein content is very high for a cereal/pseudo-cereal, but not as high as most beans and legumes. The protein content per 100 calories is higher than brown rice, potatoes, barley and millet, but is less than wild rice and oats.Nutritional evaluations indicate that quinoa is a source of complete protein.(this the source from Wikipedia).


For quinoa

2 cup quinoa
4 cups of water
2 tablespoon oil

For vegetables

1/2 cup broccoli cut into small pieces
1/2 cup capsicums cup into small pieces
1/4 cup snap peace
1/2 cup zucchini cut into small pieces
1/2 cup tomato chopped

1 tablespoon thinly sliced ginger
1 green chili minced
1 tablespoon oil
1/2 teaspoon cumin seeds
1/4 teaspoon black mustard seeds
1/2 teaspoon salt adjust to taste
1 tablespoon lemon or lime juice


For Quinoa

Wash quinoa gently changing water several times.
 In a sauce pan combine quinoa, water, oil and salt. Bring to a boil, cover and reduce the heat to low. Let it simmer until quinoa is tender and water is absorbed . This should take about 15 to 20 minutes.


When quinoa is cooked properly heat the oil in other saucepan over medium heat.
When oil is hot Add the cumin seeds and black mustard seeds as seeds crack add sliced ginger add all the vegetables salt.
Let the vegetable cook over medium heat until vegetables are tender but firm now add tomatos and cook for another 3 to 4 minutes, now add quinoa to the mix of vegetable and gently fold it, now cover it for another miute and then switch off the gass.

At the end add lemon juice.

Enjoy the quinoa with raita.
